Use the combined keystroke apple key(command)+option key+escape. This will bring up the Force Quit window. Highlight the offending application and click the 'Force Quit' button. This will quit the troublesome program without affecting any others.

I can't empty my trash

This generally happens when a file is locked. First, try emptying the trash while holding the Option key.

If that still doesn't completely empty the trash, open the trash by double clicking the trash icon, highlight the troublesome file and choose Get Info from the File Menu.

Uncheck 'Locked' and then this file ought to be able to be deleted from the trash.
